Husband has high cholesterol...need healty/tasty recipes.

Postby Basik2k » Mon Dec 07, 2009 12:52 pm

Subject says it all. My husband had a physical a few weeks back and turns out he's got high triglycerides and high cholesterol(bad).

ALl I know is that oatmeal and cheerios are good for reducing your cholesterol and that's it.

Are there any good recipes out there that are low cholesterol that actually taste good? I'm not making two meals every night, and I refuse to eat cardboard for dinner. :glare:

Got another test this week...Still high cholesterol.
Egg-whites, Cheerios, limited exercise not working too well... He's going to start Lipitor soon.

I still need some good cooking ideas if anyone has any.

I have the same problem and here is what I know..
If it tastes good it's bad for and if it tastes bad or bland it is good for you.

Chicken Breasts Stuffed with Cheese

Serves 4

Ingredients
Vegetable oil spray
4 boneless, skinless chicken breast halves (about 4 ounces each), all visible fat removed

Stuffing
7 ounces fat-free or reduced-fat ricotta cheese
2 ounces soft goat cheese
(you can use any other low fat soft cheese that you prefer.)
2 tablespoons chopped fresh parsley or 2 teaspoons dried, crumbled
1 tablespoon chopped fresh chives or chopped spring onions

Sauce
8-ounce can no-salt-added tomato sauce
2 teaspoons salt-free Italian herb seasoning
1/2 teaspoon oregano
1 medium garlic clove, minced
salt and pepper to taste

Directions
Preheat the oven to 350°F. Lightly spray a 1-quart casserole dish with vegetable oil spray. In a bowl, stir together the stuffing ingredients. In another bowl, stir together the sauce ingredients.

Put the chicken with the smooth side up between two pieces of plastic wrap. Using the smooth side of a meat mallet, or a rolling pin, or just aq clean jar, lightly flatten the breasts to a thickness of 1/4 inch, being careful not to tear the meat.

Spoon about one quarter of the stuffing down the middle of each breast. Starting with the short end, roll up the breast jelly-roll style. Place the breast in the prepared casserole dish with the seam side down (no need to secure with toothpicks). Repeat with the other breasts. Spoon the sauce over the breasts.

Bake, covered, for 40 to 45 minutes, or until the chicken is no longer pink in the center.

you can serve it with a green salad with a little olive oil and lemon dressing... yummy.. my hubby loves it..

I just got the same thing from my Doctor, She said Walnuts for a snack, fish oil pills, lots of fish high in omega 3s. They put my on medication for it which was a suprise since i'm only 30.... and i'm in fairly good shape. Life can be so confusing sometimes. i have started to wonder how what was eaten just before the test can change the results. Such as eating a bowl of alfredo pasta for lunch that day.

Same here; I get a physical once a year and historically have never had any issues. Now all of a sudden I'm told that I need to take medicine for cholesterol!?!

Like you, I'm also in good shape and considered what I had eaten earlier in the day that may have skewed the results of the test. Either way, I'm not taking any medication. I'll eat oatmeal for breakfast, but that's about it. I don't eat much as it is, and I exercise more than most.

Cholesterol? Really? :eh: Pfft..
